Truffled Sunny Side Up Eggs & Toast

Eggs will always be one of the best pairings when it comes to making the most out of black truffles. Heres our take on it. 

Ingredients

  • 1 shallot 
  • 16 oz of mushrooms  - sliced 
  • 3 Tablespoons olive oil
  • 1 Tablespoon fresh thyme
  • 1/2 Cup heavy cream
  • ½ cup of gruyere cheese 
  • Salt and pepper
  • 4 slices toast
  • 4 large eggs, fried over easy or poached

 

Instructions

  • Sauté shallots for 4min then add add mushrooms 

  • Season with S+P 
  • Let them saute for 5min
  • Add cream and mix the cheese slowly in 
  • Add eggs and let it cook for a 5 min 
  • Add truffles
  • Toast bread and plate
